Making crepes is a comfort food that I've been practicing since I was in high school. Being 50% Croatian, crepes known as palačinke (pah-lah-CHEEN-keh) have been a normal non-threatening snack I'm used to making. You don't need anything fancy, just a non-stick pan and some wrist-swirling practice. Give it a shot! Even if they end up looking wonky or end up a little think...they still TASTE delicious! Have fun~ xoxo Martina Easy Crepe Recipe (from Alton Brown) 2 large eggs 3/4 cup milk 1/2 cup water 3 tablespoons melted butter 1 cup flour Oil for brushing the pan 1. Add all the wet ingredients (except the melted butter) to a blender and pulse one or two times. Add the melted butter and pulse once more. 2. Add the flour by heaping spoonful so it doesn't lump and blend for 8-10 seconds. Don't overdo the blending or the crepes will be rubbery. It's okay if there are a few little lumps in the batter, resist the urge to keep blending or whisking the sh*t out of that batter. 4. Put the batter in the fridge to come together. 30 minute minimum. If you rest it overnight and it seems reeeally thick, you can add a touch of water and whisk to thin it out. 5. Heat a non-stick frying pan on medium-medium hot. Be prepared to brush with oil between each crepe. HOT TIP: Drop a little tester batter onto the oiled pan and if it burns or puffs up into a rippled looking tent shape the pan is way too hot. 6. Oil the pan, pour about 1/4 cup of batter into the centre of the pan while swirling the pan to spread the batter out into a thin circle. If it is a weird shape...that's okay :) HOT TIP: If the batter slides and crumples up into the corners of your pan while swirling, you added too much oil to the pan. 7. Once the batter stops moving, it is cooking. You have to wait about 45 seconds and the edges will start to peel and look crispy. You can lift the edges with your spatula and peek underneath the crepe to see if it looks super pale or if it's a light golden. Golden = you're golden to flip! 8. Flip DAT SH*T!~ Oh yeah. You pro. As it cooks on the other side you can add toppings if you want them to melt. I like my cheese melty and my sugar all melty too, but you can make a stack of crepes and just build them later. Cook that crepe for another 30-45 seconds and once it is golden on both sides you're done! HOT TIPS: Doing all sweet crepes? Consider adding a 1/4 tsp of vanilla extract or a smaaall squirt of honey/agave to the batter. I’ve taken a few months off of being on camera. I’ve seen many comments from people asking what happened to me, and I understand. I kinda left without any word. I’m sorry for that. Let me tell you what’s been going on in my life. For those of you that are frustrated by my lack of responding to other burning questions that you might have, please don’t let that frustration turn into anger towards me. It’s not that I’m not addressing speculations out of a disrespect towards you. If that’s your first guess, I’m telling you it’s the wrong guess: there are other reasons. There are some parts of my private life that I just don’t feel comfortable talking about yet. I made this video because I did see that many were concerned about me. I wanted to make this video for them. And I wanted to just let people know that, even though this is a VERY huge transition in my life, I’m actually doing well in the face of it. I am doing better than I thought I would. I hope that’s the message people can walk away with, and not let their frustration out of curiosity taint that message. I’ll talk about other parts of my life only when I’m comfortable talking about them, and not a second before that, even under a deluge of pressure from others. I’m asking you: please be kind. In the hunt for Japanese ingredients, my very good friend Miki takes me to J-Town, a Japanese shopping centre in Markham in the GTA. We share some silly stories from growing up together (I was always obsessed with video making apparently haha) and she makes me some delicious Japanese curry and cream corn croquettes. We grew up together since we were 3 years old and her family introduced me to Japanese culture. Miki's mom would make me a plate full of bite sized onigiri on my b-day. Fudgy is a nine week old Golden Retriever puppy, and here he experiences a slow feeder for the first time. He is not impressed with the challenge, and voices his opinion on it quite a lot. I’ve read that slow feeders are good for dogs, and provides intellectual stimulation for them, and they’re good for puppies as well. This is just his first time with it, and so he’s trying to figure it out. Now, one week later, he’s totally used to it and can get his chicken out in a few minutes, rather than after half an hour of borking and whining. The second slow feeder was more of a puzzle, as Fudgy is supposed to snuffle out all the muffled treats. He found that one a lot easier. Everyone, say hello to Fudgy! He's a Golden Retriever puppy, and he loves chewing on socks, sleeves, strings, chom choms, shoes, and just about everything else really. He's a really clever boy as well, and has learned how to sit, give paw, and he's taking to his crate quite well! If you haven't seen our announcement yet, we've moved back to Canada now. It’s been a very busy three months for us, as we transitioned back into living in Canada. We’ve both been taking time off of US-channel to think about what kind of content we want to make in the future. Do we still want to vlog? Do we still want to talk about food and travel? We’re not too sure, and especially with our move back to Canada, where we can be closer to family and friends, we haven’t had much time to be as creative as we usually are. Our focus first and foremost is taking care of our wellbeing, which we’ve been neglecting for a long time. We have more support here and more options. And so, while we explore those options, and figure out what our next steps in life are, allow me to introduce you to the newest member of the Stawski family: Fudgy, the very sweet golden retriever puppy. He’s been a huge help for me (Simon here) during this time, and I hope some of his cuteness brightens your day the way he’s brightened mine. Yup, that's right. We’ve moved back to Canada! Sorry for the worry we might have caused you all, but I’m sure you can understand that it was an extremely tough decision to make. We took time off from social media and from posting videos to really think about what we were going to do. To get these changes in motion. We were both concerned about the well being of our families during this time. As for me (Martina), since my dad passed away, I was especially worried about my mom being isolated and alone due to the necessary social distancing. My plan is to spend more time with her, maybe even learn some recipes that I can share with you all for Martina’s Midnight Munchies! Simon has taken a step back from being on camera and he has gotten back into writing, something he truly loved doing while in university. He’s working on a book and has even been contemplating enrolling back into school. But currently he's been a bit busy with... well, you’ll see in the next video 😉 Majority of us have had to make massive changes during this time period. Covid has changed the way of the world, so we’re going to have to change with it. I’ve always enjoyed making videos, editing, creating music, doodling so I’d like to keep sharing whatever ideas come out of my crazy head. Of course, I've also got some Build A Ladder segments I've been planning, so I'm going to give myself a smaller work load but try to be more consistent. We'll see if I can stick to my personal goals. Simon too is also going to focus on the creative ideas and processes that he enjoys, so we're looking to more flexible. It’ll be a change, but we’ve dealt with change before. Hopefully some of you will stick around and will enjoy the new changes 2020 will bring to our channel.

Two days ago I started streaming Final Fantasy 7 Remake. The original Final Fantasy 7 was the first JRPG I got into, and what ultimately got me interested in Japan. Seven years ago we went for our first high end sushi experience at Sushisho Masa. We didn’t even live in Japan back then. But we shot a video on our iPhones with a burnt in pixel, and loved every bite of it. But now seven years have passed, and we’ve gone for much more sushi here. Do we still love after all these years? Yes of course we do. We did a video about it. We wouldn’t do a video about a place we don’t like. But this place is still freaking great. We had such a great time. But we forgot our mics so please put on the captions because the audio is vrrry bad. Also, we filmed this before this Coronavirus lockdown is going on. We're just very slow at editing. For real our next video is something we've been working on since November we ain't spruce youngins anymore that can edit all night long till a video is done my bones are starting to creak and I need to sleep. Staying out past midnight makes me grumpy. The point of a hot pot is to easily use up your vegetables, so don’t be too stressed if you can’t find all the perfect ingredients. It’s all about timing and not overcooking your vegetables and meat, so once you get the base dashi (broth) flavoured as you want, start adding in the ingredients based on how long they take the cook. Begin with the longest required time, and work your way backwards until all you have left to cook is the thinly sliced meat. If you don’t eat meat, treat the bok choi like meat. STEP ONE: 1. Assemble your dashi (the broth) into a cooking pot with a lid, big enough for boiling and extra veg. Bring it to a boil on high heat. 2-3 cups water 1-2 pouches of instant dashi (follow suggested ratios on package) OR 2-3 Cups Homemade Dashi: link to homemade dashi recipe: us-channel.com/down/lZyXlrO91JlllYU/video STEP TWO: Ingredients to Flavour Base Broth: 2-3 heaping tbsp Miso paste (I used white Kyoto miso for a sweeter taste) 1/2 Tsp Minced Garlic 1/2 Tsp Minced Ginger 2 tbsp sweet sake/Mirin (optional if you do not drink alcohol) 1/2-1 tsp of soy sauce Thick stems of Bok Choi, Napa cabbage, thicker green onions, and/or carrots for flavour 2. Add the ingredients to your dashi and bring it back up to a boil. Taste the broth. Adjust according to your taste, add more miso if the taste is weak. 3. Now that the broth is ready, remove the soggy vegetable stems from the pot once they’ve given up all their sweet, sweet veggie vitamins and have gotten all sad and gross looking. 4. Now that you’ve tasted the broth, add your chicken meatballs or any other meat that requires a longer cooking time. Set to medium heat and pop on the lid. STEP THREE: Wash and Chop the rest of Ingredients, prepare to add them to the broth: 1x pack firm tofu, drained, and cut into large rectangles 1x large bunch of sliced Negi (green onions) 1x bag of chopped Mizuna (Japanese Mustard Greens ミズナ or 水菜) 1x bag of chopped Boy Choi (or spinach) 1/2x head of chopped Napa Cabbage 1x pack of cleaned/chopped mushrooms (shiitake, ennoki, or oyster are all great) 1 egg (beaten and set aside in a bowl) 1 pack Ground Chicken Meatballs 200g-400g Thinly sliced Shabu shabu Pork or Beef 5. Add the ingredients from Longest to Shortest Cooking Time: first add the Mushrooms, Green Onions, Cabbage. Gently add the Tofu and pour in the Egg. You’ll have to adjust the heat to high and back to medium as you add cold ingredients. Keep the lid handy. 6. This part goes quickly: gently add the Shabu-shabu meat piece by piece. Skim the foam that appears on the surface as the meat cooks. The meat cooks within 30secs - 1 minute 7. Once the last piece of meat goes in, add the Bok Choi and Mizuna. Put on the lid and bring back to a boil. I just want the bok choi and mizuna to be blanched but still crispy and a vibrant green. 8. Poke around gently to make sure the meat looks cooked and serve in bowls ASAP! 9. You can serve it with some Japanese sesame dipping sauce for the meat and tofu or sprinkle on some Japanese 7-Spice if you’re looking for a few different flavours. ENJOY! How do you make the best Gyudon in Japan? IN THE WORLD?! By using only the finest ingredients. None of these cheap, five minute recipes for beef rice bowls. This here is around $50 --- PER BOWL. This ain't your grandma's Gyudon. This is beef, rice, onions, and egg, the likes that US-channel hasn't seen before. This is the Lebron James of Gyudons. Let me show you what it's all about. The recipe is simple enough to follow. But I'll add it here again: - 200-300 grams of thinly sliced Matsusaka Beef - 1 Cup freshly cooked white rice - 1 Kurofuji Organic Egg Yolk - Half an onion, sliced - Spoonful of chopped Garlic - Spoonful of chopped Ginger - Tare sauce (however much you want big boy) - Checkerboard of Kewpie Mayo - Enough green onions to make it rain - Some pickled ginger on the side If you can't find premade Tare sauce, no worries. It's simple enough to make. Just mix equal parts sugar, sake, mirin, and soy sauce. Start with three spoons of each. Mix that all up. Seems like enough? Good! Not enough? Add more and mix up again. Japanese Pudding/Purin Recipe - Martina's Midnight Munchies

Japanese Pudding, aka Purin, can be found in any convenience store in Japan, and as souvenirs at many different train stations. Today, we're not just going to show you how to make it, we're going to show you how to level it up and make it taste AMAZING. Seriously better than the ones we get at the conbini. Come, check it out. You're gonna love it :D Here's the list of ingredients for the recipe: For the Sauce - 4 tbsp sugar 1 tbsp water 1-1/2 tbsp hot water For the Pudding - 2 eggs (3/4 cup) 200ml milk (1/4 cup) 50ml cream 3 tbsp white sugar 2 tbsp brown sugar 1/2 tbsp vanilla (Optional vanilla bean) Instructions: 1. Watch video 2. Copy what Martina did 3. Eat Pudding Longer instructions: Caramel Steps: 1. Oil your heat proof containers and set aside. 2. Add your 4 tbsp of sugar + 1 tbsp of water to a saucepan and heat on medium - medium high. Don’t stir it or you’ll stop the crystallization process. 3. When the sugar starts to become golden in colour in one section, gently swirl the pan to even out the water and to keep that section of sugar from becoming burnt. 4. Depending on how you like the taste of your caramel (sweet VS more bitter sweet), you must stop the cooking process by using the hot water to thin it out. I prefer a darker golden colour, but you can also stop the cooking at a lighter golden colour. 5. Use a LONG HANDLED spoon to add 1 to 2 tbsp of hot water to your caramel, tilting the saucepan away from you as it will splatter scalding hot candy. 6. Kill the heat, and swirl the caramel to test the thickness. If it is very thick and syrupy, add a bit more hot water. 7. Pour your finished caramel sauce into the bottom of the pre-greased heat proof pudding containers of your choice. Set it aside to cool. Pudding Steps: 1. Unceremoniously dump the sugar, milk + cream, vanilla extract, and vanilla beans into a saucepan but don’t turn on the heat yet. 2. Crack two eggs into a heatproof bowl and gently whisk to blend the eggs, but do not whip it or you’ll add too much air and bubbles. Set aside. 3. Heat the sugar + milk mixture on medium, stirring until the sugar dissolves totally. Do not allow the mixture to boil. 4. Once the sugar seems all dissolved, very S L O W L Y add the hot milk mixture to the eggs, bit by bit, stirring gently (this is called tempering). 5. Once the temperature of the bowl matches the temperature of the milk mixture, you can dump the rest of the mixture into the eggs. 6. Gently pour the completed egg + milk mixture into the pudding containers with the caramel resting at the bottom. 7. Using tinfoil (or lids if using jam jars) cover the pudding so they can steam. Waterbath Cooking 1. Place the ready filled pudding containers into a pan (preferably one with a lid), and carefully fill the pan with water. You want the pudding inside the containers to match the height of the water, but don’t let the water overflow into the pudding containers themselves. 2. Bring the water up to boil and then drop the heat down to a simmer. Keep the pan covered with a lid if you have one to create an even steam. 3. Let the pudding gently simmer in this bath for 15-20 minutes. It needs this alone time to relax and reflect on its day. 4. Check in on the pudding around 15 min, it’s okay to uncover the tinfoil, you’re looking for a still jiggly pudding, but not something soupy. If it has a soupy liquidy middle, keep cooking. 5. Once it is all set, remove the containers from the hot water bath, and let cool for 15 min on the counter. 6. Place them into the fridge to cool for 3-5hours (or overnight) and if you have roommates, write threatening notes on the puddings to prevent them from eating your hardworking. Serving the Purin (the upside down method) 1. If your pudding doesn’t want to come out of the container, place it in a bowl of hot water for a few seconds to melt the edges a bit. Or, you can use a toothpick on the edge to create an air gap, or gently use your fingers to press down on the pudding edges to loosen. 2. Put a plate or bowl on top of the pudding, and flip upside down! WHOOOOAAAA~ 3. Hurrah! You’ve made some kickass homemade Japanese style pudding. Enjoy and instagram the heck out of it. And with Ehlers-Danlos Syndrome, Martina’s always in pain, so how do we know if she actually broke her hand or not? This is a real conversation we have. We flew out to Yamaguchi, rented a car, and went on a roadtrip to the Fugu capital of Japan. Amongst our journey we tried super poisonous pufferfish (also known as Blowfish or in Japanese, Fugu) prepared in many different ways. If it’s not prepared correctly, you will be paralyzed from the poison until you suffocate to death...people in Japan have died before from incorrectly prepared Fugu. What's Fugu taste like? Back in the Christmas rush, I spent a day out in Tokyo on a lie: I told Martina I was shopping for her Christmas present. That was already bought. Instead, I was out planning a romantic getaway for us for Valentine’s Day. We always wanted to experience Northern Japan’s crazy snowfall, and I found out about Zao Onsen in Yamagata, which was supposed to be snowy. I just, err, didn’t know it was going to be this much snow. So I booked a petsitter for Meemers, secretly cancelled our meetings, called the hotel and checked to see if they’re tattoo friendly, booked a room and our Shinkansen tickets. I booked a taxi to pick us up from home, and had one piece of luggage secretly packed with all of the clothes, toiletries, and medicine we’ll need. And then...the rest is in the video. I hope you like it, and I hope it inspires you to try to do something a little special for your partner, even if you’ve been together for a very long time. This isn't an ad for the Onsen. It's been a long time coming but Martina finally found a chance to do her hair bun tutorial while I was out doing something else. I forget what I was doing but I wasn't home. Probably grocery shopping. Getting some nice cuts of pork shoulder for our new slow cooker. Oh hell that slow cooker is so good. We just got one and it's the easiest way to make delicious food, and we're kinda angry that we didn't know about this sooner. We've been cooking like suckers all these years. Was super concerned at first seeing this video but upon rewatching it, I think I can really see that Simon is on a good path :) It's just different from what viewers are used to, but I believe what he's saying and that he's a better version of himself from before. I'm not one to speculate about other people's personal lives not even people I know really well and I don't use twitter or whatever so I missed all the inquisitive questions and speculation. When you guys hadn't posted in a while I checked FB and I read that you were taking a break and I was like okay cool. I wasn't worried until I saw you at the beginning of the video because sudden weight loss can be quite serious. My brother, he's a big guy always has been and a while back he had that surgery to help him loose weight because nothing else he did helped, and his wife was like you have to tell your mom first because if she sees you and you've lost a lot of weight since the last time she saw you she'll freak out. At the start of the video it's like all the sudden you're a lot thinner. In reality it's been months since the last time I saw you on camera, but that startling difference between the last time I saw you and this time was unsettling and worrisome. Then I watched the video and you seem good, less hyper but still you, actually you were pretty similar to that video you did when you talked about meditation and running the first time. As the Doctor says, we are all different people throughout our lives. So I get you're going through something transformative as we humans do. Anyway, thank you for taking the time to make this video to explain even though it's really none of our business. You take care of yourself, do what feels right and don't worry about the rest of us.

Toronto has chains like Mymy Chicken and Gong Cha now so it would be cool to see how those compare to their counterparts in Asia! Also, Toronto has a chain of ramen restaurants called Kinton, it would be kinda interesting to see how the food scene in the city compares to Asia and to what it was like a decade ago before you left :D

Cramps are vicious! Feels like my guts are behind stirred and cut up by scissors then ripped out of my "V" I FULLY UNDERSTAND THAT! The daily pain you have is similar to mine. I'll wake up essay to push through this horrid world and then I'm knocked out by fatigue and rising pain levels!

love you simon :-) i hope the concern we express is seen more as somebody asking if you have your seatbelt on before a long car ride, rather than people saying you can't go on a trip and explore. the precepts of meditation can become its own high, and encourage detachment and isolation in ways that can stifle the most meaningful parts of living when unbalanced. when much of our life is dominated by being unable to control negative thoughts/emotions, that first foray into emotional control is like boromir with the ring of power hahahha. im very excited for your journey but i really do encourage you to keep your circle close to you as you tread deeper - they are your best anchor and will catch you if you trip ! all love to you !

I also meditate every day about 1hour usually split into two 30min sessions. Coincidentally my meditation time crosses over with another one of my hobbies 👀 and I feel like I have gained more self awareness? Like I’m better able to understand my self and be able to retrain my brain? 🧘🏽‍♀️ 🍁🕓2️⃣0️⃣🧠 🧘🏽‍♀️ Incase our hobbies 👀 are similar I would recommend expanding your tastes. 👅👈🏽

Ingredients: 2 TB unsweetened cocoa 1/2 tsp baking powder 1 TB sugar 1/4 tsp salt 1/2 cup oats 1/4 tsp cayenne pepper 1/3 cup honey and maple syrup 2 tsp vanilla extract 1/4 cup melted coconut oil 1 1/2 cups black beans (rinsed, cooked, and mashed) 1/2 cup chocolate chips Preheat oven to 350F/176C Step 1 Dump everything in o the bowl except choco chips Step 2 Mix Step 3 Add choco chips and fold in to the mix Step 4 Put batter into greased pan and top with extra choco chips Step 5 Bake for 18-20 min Let cool and eat!

I want both of them to be ok mentally and emotionally but i honestly feel like it's an end to an era :( I hope you two are getting the help and peace you both deserve. Pickles the blue cat looks like an adorable book. I love the illustrations and I have written a couple of little books like that for my girls! (I have 3 daughters 11,5 and 4) they love animals, especially cats and dogs and bunnies! It’s great to see you with your friend, a lifelong one at that. I have Alton Brown's entire kitchen book series, mostly second hand, because I once had a cheese bread recipe of his and had to make it for myself. The person who made the bread lost the book, and only remembered the cover! Anyways, he has a scientific mindset that puts me at ease in the kitchen, love him.
